Ingredients
  

Graham or gingersnap crust
  • 2 cup crumbs Use either graham cracker crumbs or gingersnap crumbs.
  • 0.33 cup sugar
  • 6 tbsp melted butter
Vanilla cheesecake layer
  • 16 oz cream cheese, softened
  • 0.5 cup sugar
  • 2 eggs
  • 0.25 cup sour cream
  • 1.5 tsp vanilla
Pumpkin swirl layer
  • 8 oz cream cheese, softened
  • 0.5 cup pumpkin puree
  • 0.25 cup brown sugar
  • 1 egg
  • 1.5 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 0.5 tsp vanilla

Method
 

Bake the crust
  1. Preheat oven to 325°F. Line a 9x13 pan, press the crumbs, sugar, and melted butter into an even layer, and bake for 8 minutes.
  2. Remove the pan from the oven and keep the crust ready for layering. Let it cool briefly while you prepare the fillings.
Make the cheesecake layers
  1. Beat the cream cheese, sugar, eggs, sour cream, and vanilla until smooth. Set the vanilla cheesecake mixture aside.
  2. Beat the cream cheese, pumpkin puree, brown sugar, egg, pumpkin pie spice, cinnamon, and vanilla until smooth. Set the pumpkin swirl mixture aside.
Assemble and swirl
  1. Pour the vanilla cheesecake mixture over the baked crust and spread it into an even layer. Dollop the pumpkin swirl mixture in large spoonfuls over the top.
  2. Use a knife to swirl dramatically through the dollops and into the vanilla layer. Bake for 32-35 minutes at 325°F until the center is just set.
Cool and chill
  1. Cool the bars to room temperature. Refrigerate for 3 hours to fully set.
  2. Cut into bars after chilling. Serve cold so the swirl pattern stays crisp and defined.

Notes

Pro tip: Soften cream cheese to room temperature so both layers beat smooth with no lumps—smooth filling makes a cleaner swirl. Store covered in the refrigerator for up to 4 days; freezing is not recommended because the pumpkin swirl can slightly soften after thawing. For a lighter option, swap sour cream for full-fat Greek yogurt for a similar tang.
