Bake the crust
- Preheat oven to 325°F. Line a 9x13 pan, press the crumbs, sugar, and melted butter into an even layer, and bake for 8 minutes.
- Remove the pan from the oven and keep the crust ready for layering. Let it cool briefly while you prepare the fillings.
Make the cheesecake layers
- Beat the cream cheese, sugar, eggs, sour cream, and vanilla until smooth. Set the vanilla cheesecake mixture aside.
- Beat the cream cheese, pumpkin puree, brown sugar, egg, pumpkin pie spice, cinnamon, and vanilla until smooth. Set the pumpkin swirl mixture aside.
Assemble and swirl
- Pour the vanilla cheesecake mixture over the baked crust and spread it into an even layer. Dollop the pumpkin swirl mixture in large spoonfuls over the top.
- Use a knife to swirl dramatically through the dollops and into the vanilla layer. Bake for 32-35 minutes at 325°F until the center is just set.
Cool and chill
- Cool the bars to room temperature. Refrigerate for 3 hours to fully set.
- Cut into bars after chilling. Serve cold so the swirl pattern stays crisp and defined.

Pro tip: Soften cream cheese to room temperature so both layers beat smooth with no lumps—smooth filling makes a cleaner swirl. Store covered in the refrigerator for up to 4 days; freezing is not recommended because the pumpkin swirl can slightly soften after thawing.
