Preheat and mix
- Preheat oven to 375F and line baking sheets with parchment or silicone mats.
- Blot pumpkin dry, then beat butter, brown sugar, and pure maple syrup until smooth.
- Add blotted pumpkin, egg yolk, vanilla, and maple extract; mix until combined.
Combine and shape
- Add dry ingredients (flour, baking soda, pumpkin pie spice, cinnamon, and salt) and mix just until no dry streaks remain.
- Fold in toasted pecans.
- Scoop 1-1/2 tablespoon rounds and space them on the lined baking sheets.
Bake, glaze, and finish
- Bake at 375F for 10-12 minutes, until edges look set and lightly golden.
- Cool cookies, then drizzle with maple glaze made from powdered sugar, maple syrup, and milk and sprinkle flaky sea salt on top.
