Ingredients
  

Coconut chicken
  • 1.5 lb chicken breast Cut into bite-sized pieces.
  • 1 can (13.5 oz) coconut milk
  • 3 garlic cloves Minced.
  • 1 tbsp fresh ginger Grated.
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 1 tsp turmeric
  • 1 tsp red curry paste
  • 1 tbsp oil Used for searing and cooking.
  • 0.25 salt To taste.
  • 0.25 pepper To taste.
To serve
  • 1 jasmine rice Cooked jasmine rice.
  • 1 fresh cilantro For topping.
  • 1 lime wedges For serving.
  • 1 mango salsa For topping.

Method
 

Sear the chicken
  1. Season the chicken breast pieces with salt and pepper, then sear in oil over high heat for 4–5 minutes until golden. Set aside while you cook the aromatics.
Simmer the coconut curry sauce
  1. In the same pan, sauté the garlic and grated ginger for 1 minute. Add coconut milk, soy sauce, lime juice, honey, turmeric, and red curry paste.
  2. Stir and bring the mixture to a simmer, then return the chicken to the pan. Simmer until the sauce reduces and thickens slightly, 10–12 minutes, until the chicken is cooked through.
Serve the rice bowls
  1. Divide cooked jasmine rice among bowls. Top with the coconut-sauced chicken, mango salsa, fresh cilantro, and serve with lime wedges.

Notes

For best texture, keep the sear quick and hot so the chicken browns before it simmers. Refrigerate leftovers in an airtight container for up to 3 days; freeze chicken and sauce (without toppings) for up to 2 months. For a dairy-free swap, this recipe already is naturally dairy-free—just confirm your red curry paste is gluten-free if needed.
