Ingredients

Chicken
  • 1.5 lb boneless skinless chicken thighs cut into bite-sized pieces
  • 0.75 cup cornstarch
  • 0.75 cup all-purpose flour
  • 2 tsp garlic powder
  • Salt and pepper to taste
  • 2 large eggs beaten
  • vegetable oil for frying
Orange sauce
  • 0.5 cup fresh orange juice
  • 2 tbsp orange zest
  • 0.33 cup soy sauce
  • 0.25 cup brown sugar
  • 2 tbsp rice vinegar
  • 1 tbsp hoisin sauce
  • 3 garlic cloves minced
  • 1 tsp fresh ginger grated
  • 1 tsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tablespoons water
  • 2 tbsp water
To serve
  • steamed rice
  • sesame seeds
  • green onions sliced

Equipment

  • 1 Dutch oven
  • 1 sheet pan
  • 1 cast iron skillet

Method

Prep the double-dipped breading
  1. Mix cornstarch, all-purpose flour, garlic powder, salt, and pepper in a bowl until evenly combined. Visual cue: the dry mixture looks uniform in color and texture.
  2. Dip the chicken pieces into beaten large eggs, letting excess drip off. Visual cue: the chicken gets fully coated but still looks wet and glossy.
  3. Dredge the egg-coated chicken in the flour-cornstarch mixture until each piece is well covered. Visual cue: you should see a thick, dry coating clinging to the surface.
  4. Double-dip by returning the coated chicken to beaten large eggs, then dredge again in the flour mixture for maximum crunch. Visual cue: the second coating looks heavier and more textured.
Fry until deeply golden
  1. Heat vegetable oil in a Dutch oven or cast iron skillet to 375°F. Visual cue: small bubbles form around the edge of a test piece.
  2. Fry the breaded chicken at 375°F for 5-6 minutes until deeply golden and cooked through, turning as needed for even color. Visual cue: the crust looks crisp, browned, and set.
  3. Transfer the fried chicken to a sheet pan to drain. Visual cue: steam subsides quickly while the crust stays dry and crunchy-looking.
Make the sticky orange sauce
  1. In a saucepan, combine fresh orange juice, orange zest, soy sauce, brown sugar, rice vinegar, hoisin sauce, minced garlic cloves, grated fresh ginger, and sesame oil. Visual cue: the mixture turns vivid orange-brown and smells strongly citrusy.
  2. Bring the sauce to a boil over medium-high heat, then stir constantly for 1 minute. Visual cue: the bubbles look active and the sauce thickens slightly.
  3. Stir in the cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) and cook 2-3 minutes until thick and glossy. Visual cue: the sauce coats the back of a spoon and holds a slow, shiny trail.
Coat and serve
  1. Toss the crispy chicken in the orange sauce until evenly coated. Visual cue: the crust stays crisp while the pieces become lacquered, vivid orange, and glossy.
  2. Serve the orange chicken over steamed rice and finish with sesame seeds and sliced green onions. Visual cue: toppings sit on top for contrast against the bright sauce.

Notes

Pro tip: keep the oil at 375°F so the crust fries quickly and stays crisp; if the oil drops, the coating will turn pale and absorb oil. Refrigerate leftovers in an airtight container up to 3 days; reheat in a hot oven or air fryer to regain crunch (freezing not recommended for best texture). For a gluten-free swap, use a 1:1 gluten-free all-purpose flour blend for the dredge.
