  • 1 salt and pepper to taste
Toppings
  • 4 oz feta cheese, crumbled
  • 2 tbsp pomegranate seeds
  • 0.25 fresh mint and pine nuts for serving

Method
 

Preheat and line
  1. Preheat your oven to 425F and line a sheet pan with parchment or lightly grease it for easy release.
Season and coat
  1. Toss the pumpkin wedges with maple syrup, olive oil, chili flakes, smoked paprika, cinnamon, salt, and pepper until evenly coated with a glossy layer.
Roast
  1. Roast for 30-35 minutes at 425F, flipping the wedges halfway, until caramelized and tender.

  1. Arrange the roasted pumpkin on a platter and scatter crumbled feta, pomegranate seeds, fresh mint, and pine nuts over the top.
