Cheese sauce

  • 2 clove garlic cloves, minced
  • 0.75 cup whole milk
  • 6 oz Velveeta, cubed
  • 0.5 can (5 oz) Rotel tomatoes with green chiles
  • 0.25 tsp cayenne

Method
 

Season and sear the chicken
  1. Season the boneless skinless chicken breasts with cumin, chili powder, smoked paprika, salt, and black pepper to taste. Make sure both sides are evenly coated for consistent flavor.
  2. Heat olive oil in a skillet over medium-high heat and sear the chicken for 5–6 minutes per side until golden and cooked through, then set aside. You should see deep browning on the surface before moving on.
Make the queso cheese sauce
  1. In a small saucepan, melt butter over medium heat and add the minced garlic, cooking for 1 minute. The garlic should turn fragrant without browning.
  2. Add the whole milk and bring it to a gentle simmer, then stir in the Velveeta, Rotel tomatoes with green chiles, and cayenne until completely smooth. Keep stirring so the cheese melts evenly and the sauce looks glossy.
Smother and serve
  1. Pour the queso cheese sauce generously over the seared chicken and serve immediately. The chicken should be fully smothered with sauce pooling slightly in the skillet.
  2. Top with pico de gallo, fresh cilantro, and jalapeño slices. Finish right before eating so the toppings stay bright and fresh.

Pro tip: use medium-high heat to get a golden sear, but keep the queso at a gentle simmer so it stays smooth. Refrigerate leftovers in a sealed container for up to 3 days; reheat in a skillet over low heat with a splash of milk to loosen the sauce. Freezing is not recommended due to texture changes in cheese sauce. For a dairy-light swap, use a lactose-free whole milk and lactose-free cheese product in place of Velveeta while maintaining the same melting method.
