Method
Preheat and build the base
- Preheat oven to 350F and pour the melted unsalted butter into a 9x13 baking pan.
- Sprinkle the gingersnap cookie crumbs evenly over the butter so the crust is covered.
Make the pumpkin layer
- Whisk sweetened condensed milk, pumpkin puree, pumpkin pie spice, and cinnamon until smooth and evenly combined.
- Pour the pumpkin mixture evenly over the crumbs, filling any gaps.
Add toppings and bake
- Layer sweetened shredded coconut, white chocolate chips, butterscotch chips, pecans, and toffee bits evenly over the top.
- Press down gently with your hands so the toppings adhere to the pumpkin layer.
- Bake for 30-35 minutes at 350F until the edges are golden and the center is set, with visible melted chocolate and caramelized bits.
Cool and cut
- Cool completely before cutting into bars so the layers slice cleanly.
Notes
Pro tip: press the toppings down lightly right before baking to help them bind to the condensed milk layer and prevent sliding. Store covered in the refrigerator for up to 5 days. Freeze for up to 2 months, thaw overnight in the fridge. For a dietary swap, use dairy-free sweetened condensed milk and dairy-free white chocolate/butterscotch chips to make it dairy-free.
