Ingredients

pumpkin mousse
  • 8 oz cream cheese Softened to room temperature.
  • 1 pumpkin puree
  • 1 cup powdered sugar
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 8 oz whipped topping (Cool Whip) Thawed.
decoration
  • 24 Oreo cookies Crushed into crumbs.
  • 1 candy pumpkins or gummy pumpkins
  • 1 green candy or gummy worms
  • 1 pretzel sticks Used as vines/stems.

Equipment

  • 1 stand mixer

Method

Make the pumpkin mousse
  1. Beat the cream cheese until smooth. Add the pumpkin puree, powdered sugar, pumpkin pie spice, cinnamon, and vanilla, then beat until fully combined (no lumps), scraping the sides as needed.
  2. Fold in the whipped topping until the mousse is light and evenly streak-free. Keep mixing gentle so the texture stays fluffy.
Assemble the dirt cups
  1. Layer the clear cups with pumpkin mousse, then Oreo crumbs, then more pumpkin mousse. Top with additional Oreo crumbs to form a thick “dirt” layer on the surface.
  2. Refrigerate the cups for 1 hour. Chill until set and firm enough to hold the layers when you serve.
Decorate
  1. Press candy pumpkins into the Oreo dirt so they peek up from the “soil.”
  2. Tuck green gummy worms into the dirt so they poke out from the top. Add pretzel sticks into the sides or top as vines/stems for a pumpkin patch look.

Notes

For the smoothest mousse, soften the cream cheese fully before mixing. Store covered in the refrigerator up to 3 days; do not freeze, as the whipped topping can weep after thawing. For a simple swap, use reduced-fat cream cheese to lower calories while keeping the creamy texture.
