  • 0.5 cup powdered sugar
  • 1 tsp pumpkin pie spice

  • 0.5 cup graham cracker crumbs stirred into the mixture
Spiced graham cracker coating
  • 1.5 cup graham cracker crumbs for rolling
  • 1 tsp cinnamon for rolling
  • 0.25 tsp pumpkin pie spice for rolling

Prepare the pumpkin filling
  1. Blot the pumpkin puree very dry. This helps keep the cheesecake mixture from becoming loose.
  2. Beat the softened cream cheese until smooth, then add the blotted pumpkin puree, powdered sugar, pumpkin pie spice, cinnamon, and vanilla. Mix until fully combined and creamy.
  3. Fold in 1/2 cup graham cracker crumbs to help firm the mixture. Stir just until evenly incorporated.
  4. Refrigerate the mixture for 45 minutes until firm enough to roll. You should be able to scoop and shape it without sticking.
Coat and chill
  1. Mix the coating crumbs with 1 teaspoon cinnamon and 1/4 teaspoon pumpkin pie spice in a shallow bowl. Stir to evenly distribute the spices.
  2. Scoop the mixture into 1-inch balls, then roll each ball in the spiced graham cracker coating. Press lightly so the crumbs adhere.
