Pork chops with parmesan crust
  • 4 bone-in pork chops about 1 inch thick
  • 1 cup parmesan cheese grated
  • 0.5 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 0.5 tsp smoked paprika
  • 2 tbsp Dijon mustard
  • 2 tbsp mayonnaise
  • 0.25 salt to taste
  • 0.25 black pepper to taste
  • 0.25 lemon wedges for serving
  • 0.25 fresh parsley for serving

Method
 

Prep and preheat
  1. Preheat the oven to 425°F and line a sheet pan with foil, placing a wire rack on top so the crust stays crisp.
  2. Mix parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, and smoked paprika together until evenly combined.
  3. Season the pork chops with salt and black pepper to taste.
  4. Stir Dijon mustard and mayonnaise together, then spread a thin layer over the top of each chop.
  5. Press the parmesan mixture firmly onto the top and sides of each chop to form a thick, fully coated crust.
Bake
  1. Place the pork chops on the wire rack and bake for 22–25 minutes at 425°F, until the crust is deeply golden and the internal temperature reaches 145°F.
Rest and serve
  1. Rest the pork chops for 3 minutes to help the juices settle.
  2. Garnish with fresh parsley and serve with lemon wedges.

Notes

For extra crunch, make sure the parmesan mixture is pressed firmly into the sides—not just the tops—so it doesn’t shed while baking. Store leftovers in an airtight container in the refrigerator up to 3 days. Freezing is not recommended because the crust texture softens. For a gluten-free option, use gluten-free panko breadcrumbs and ensure all seasonings are gluten-free.
